Tofu Fried Rice cooked with corn and vegetables is so delicious! I thoroughly enjoyed this dish, and so I am happy to share it with you.

This is how to make tofu fried rice the way I enjoy it :)
Tip #1 - Fry Your Tofu Properly
Slice or dice the tofu then fry them for about 15 to 20 minutes or until crisp in hot coconut oil.
Be sure to bring the oil to advanced heat before adding your tofu. The oil must be very hot and it must be enough to cover the tofu slices while being fried.
Tip #2 - Adding All Ingredients For The Tofu Fried Rice Together
In addition to my unseasoned and fried tofu, I also added pak choy, pineapple, carrot, and sweet pepper to my dish. You can add other spices and veggies as you like, based on your preference.
In a big enough saucepan (I used my electric skillet) pour avocado oil and wait for it to get heated. Then add the pak choy and carrots followed by the other ingredients. See how I made this dish in the video below for more details.
