The most delicious fried chicken breast I have ever tasted. Super simple recipe. Frying chicken breast this way makes me want to eat it every day!
Tender Fried Chicken Breast Recipe
Chicken Breast (2 Cuts)
1/2 Tsp. Salt
1 Tsp. Mustard
Southwest Chipotle Seasoning Blend
1/2 Cup Flour
1 Whole Green Scotch Bonnet Pepper
Garlic (3 cloves)
Clean and wash the chicken thoroughly in the vinegar.
In a bowl, add your egg, mustard, parsley (flakes), salt, black pepper, and seasoning blend, then whip them together until fully combined. On your cutting board (or on a flat plate), place your chicken breast, slice them open (as evenly as possible), and make tiny slices to allow the inside to cook properly. Cover the meat with flour, not too much, just enough to ensure it is all covered, then dip the floured chicken in the egg mixture.
Add the oil to a saucepan and allow it to get heated, then add the whole pepper and garlic cloves. Fry them for about 3-5 minutes in the oil then remove them. Add your chicken (one chicken breast at a time), then fry for six minutes on each side.
Remove from the frying pan and add to your air fryer for eight minutes to reduce the oil. Serve and enjoy.
For your mashed potato: wash, peel, and dice. Add the potato to boiling water and let boil until cooked to your preference (or soft enough to crush). Remove them from the water and immediately add mayonnaise, cheese, and butter (optional) and mashed them together until smooth (per your preference, I like mine lumpy).
