Colorful, spicy, crunchy pickled pepper sauce. My very first time making pickled pepper sauce. This is also called escovitch sauce and is used mostly on fish. This is very spicy so be careful when preparing it.
Ingredients

Carrots
Sweet/Bell Pepper
Radish
Garlic
Scotch Bonnet Pepper
Onions
Turmeric
Ginger (powdered with sugar)
Thyme
Vinegar (white)
Instructions
This recipe can be cooked or uncooked. I did the uncooked version. I needed it to be crunchy. First, gather all ingredients. Add the powdered ginger and vinegar to a saucepan and warm until dissolved. Then dice or chop all the other ingredients to your liking. Add chopped ingredients to a jar then pour the vinegar over the vegetables and spices in the jar.
