Fried Wings with Curried Rice

I enjoy making this meal. It is quick, easy, and very tasty. Also, as a food blogger, it helps when the meal presents well in the picture. The colors are bright and attractive. It takes approximately 45 minutes or so to cook this meal.


Now one will care for you more than you care for yourself. Your self-care habits will set the standard for others.

Curried Rice


Ingredients


3 Cups Rice

4.5 Cups Water (or as you prefer)

1/2 Tsp. Salt

1/4 Tsp. Curry

1 Tsp. Coconut oil



French Fried Wings


Ingredients


4 Chicken wings

1/4 Tsp. Salt

1 Cup Coconut Oil

1/2 Cup Flour

1/4 Tsp. Baking Powder

Seasoning (of your choice)... I am using black pepper, Italian, and Table Blend

Water




Directions


Wash rice thoroughly, then add water, salt, oil, and curry. Boil for about 15 minutes (or as needed based on your preference).


Wash wings, and massage in 3/4 of the seasonings (black pepper, Italian, and table blends) and salt. Marinate it for about 15 minutes (you can do this overnight or longer if you prefer). Add the flour, baking powder, and remaining seasoning and salt to a bowl and mix into batter with water (not too thick, not too thin). I would recommend a non-stick pot for use in frying the chicken (I didn't use one but it would have been better).


Place a frying pan on the stove and add the coconut oil. Allow the oil to get very hot. Make sure your frying pan has no water before adding the oil. Cover the seasoned wings in the mixed batter, then add chicken to hot oil. Fry until golden brown or to your preference.




When the chicken is fried, while the rice is still on the stove (low heat), place the fried wings on top of the rice. Top this with diced spring onions. Leave for about five minutes. Turn off the stove and let it rest for another five minutes.


Serve as desired. I added sweet pepper, tomato, and Thai Sweet Chilli Sauce to my plate.
