Vanilla Coconut Cake Recipe

I did it again! I baked another dessert and it was delicious! I made Vanilla Coconut Cake. I am pinching myself because I cannot believe all this baking that I've been doing. I am extremely proud of myself. Try something new today, surprise yourself :)

Vanilla Coconut Cake Recipe

2 Eggs

1 Cup Sugar

1/2 Cup Coconut Oil

1/2 Cup Coconut Milk

1 Tsp Vanilla Extract

1 Cup Flour

Coconut Flakes (as much as you like)

1/2 Tsp Baking Powder

How To Make Coconut Milk

Dehusk a coconut

Dice or chop it into small pieces

Add to blender

Add water (I like using filtered water)

Blend using the 'grating' feature

Strain (separate the coconut flakes from the liquid)

Instructions: Using a whisk combine the eggs, sugar, oil, milk, and vanilla together for about one minute. Add the flour (sift flour), coconut flakes, and baking powder, then whisk some more. Pour into the baking container when finished them bake.
