Brown Stew Oxtail

The most delicious oxtail dish that I've ever cooked. This was special to me and I am very proud of myself.

Brown Stewed Oxtail


Ingredients


Oxtail

Vinegar

1/2 Tsp. Salt

Parsley

Coconut Oil

Sesame Oil

Steak Seasoning Blend

Black Pepper

Corn Starch

1 Whole Green Scotch Bonnet Pepper

Garlic

Onion

Sweet Chili Sauce

Ketchup



Directions


Clean and wash the oxtails thoroughly in the vinegar and lime.


First, fry the oxtail in coconut oil. When they have achieved the desired brown, add them to the pressure cooker.



While the oxtail is being cooked, make your gravy. Add all your desired vegetables to a saucepan with a little bit of oil and stir-fry them. After the oxtails are properly cooked with the desired tenderness. Add the liquid from the oxtail to the saucepan with the vegetables and complete your sauce. Mix the cornstarch with a bit of water then add to the gravy.



For your mashed potato: wash, peel, and dice. Add the potato to boiling water and let boil until cooked to your preference (or soft enough to crush). Remove them from the water and immediately add mayonnaise, cheese, and butter (optional) and mash them together until smooth (per your preference, I like mine lumpy).
